Hints of jasmine and notes of white fruits like peach and apricot, with a refined finish.\u00a0 Pair with stews, seasoned ethnic food, such as Peruvian, Mexican and Indian, as well as Asian dishes and cheeses.<\/span><\/p>\n<p><span style=\"color: #993300;\"><b>The Original Dark Horse Cabernet Sauvignon from California ($14.99) &#8211; <\/b>After the primary fermentation of the Cabernet, a portion of the wine was ultra-filtered to refine tannins and remove bitterness, while retaining structure and increasing concentration. Grape sourcing was primarily northern valley (Lodi and Delta). Warm fermentation (80-85F) was used to provide great color, structure and fruit characters to this wine. The wine was stored for a period of 4-9 months in stainless steel tanks to preserve all aromas and flavors. The palate is rich and intense with flavors of mocha, dark fruit and hints of oak.\u00a0 Bold flavors of blackberry and black cherry, supported by firm tannins, brown spice and a dark chocolate espresso finish.<\/span><\/p>\n<p><span style=\"color: #993300;\"><b>Cain Cuvee NV8 from California ($39.99) &#8211; <\/b>I have been a big fan of this wine for many years.\u00a0 I just got another case in and thought it would be a good night to share some with all of you.\u00a0 Here are some of the winemaker&#8217;s notes:\u00a0 The Cain Cuv\u00e9e reflects our vision of what a classical red wine can be. Our intention is to create a Cabernet blend that sits lightly and refreshingly on the palate. At the same time, we are guided by the same criteria that drive all of our winemaking\u2014complexity, balance, and finish. We deliberately style this wine so that it is at once more sleek and more approachable, while at the same time preserving a fresh vibrancy. We\u2019re walking a tightrope here. It is along this dynamic tension that we can find a wine that is both lively and captivating, and, at the same time, immediately delicious. Because the wine is balanced and not overripe, it has great aging potential, and it can even improve for a day or two after it\u2019s been opened.\u00a0 Another unique element of the Cain Cuv\u00e9e is our use of two primary vintages in the blend\u2014 in this case there are actually three vintages.\u00a0 The NV8 consists primarily of 2008 (hence the \u201c8\u201d) complemented with a significant proportion of the excellent 2007 vintage and a soup\u00e7on of the 2006, which we love. All of these factors contribute to a wine that is both well balanced, surprisingly complex, and with a unique personality.
